Romano Roasted Zucchini Recipe

My mom just finished visiting us and staying for a week. Whenever she is here she likes to make us dinner and it’s always delicious, high-calorie, gravy-rich dishes. Now don’t get me wrong, I LOVE when she visits but after she leaves, I feel like I should cook light šŸ™‚ This recipe for Romano Roasted Zucchini is light without all those added calories yet still very tasty!!! You can use Parmesan instead of Romano Cheese. My commissary didn’t have Parmesan so I went for Romano! It turned out very crispy and delicious. Two-thumbs up from the family šŸ™‚

Romano Roasted Zucchini Recipe

Ingredients

  • 3 Zucchini
  • 1 tablespoon olive oil
  • salt
  • pepper
  • garlic powder {I used Garlic Salt :)}
  • 1Ć¢Ā?3 cup shredded Romano cheese

Instructions

  1. Preheat oven to 400
  2. Cut Zucchini lengthwise and into quarters.
  3. Lay zucchini on a cookie sheet covered with parchment paper.
  4. Brush olive oil on each.
  5. Sprinkle salt, pepper and garlic on each.
  6. Top with cheese.
  7. Bake for about 15 minutes.
