Kale Garbanzo Italian Seasoned Soup Recipe

Kale Garbanzo Italian Seasoned Soup Recipe: Crockpot Cooking
Ingredients
- 1 cup chopped celery
- 1 cup chopped carrots
- 1 cup fresh corn kernels
- 1 medium yellow onion, chopped
- 12 cups fresh chopped kale
- 1 zucchini, chopped
- 1 can (15 oz) fire roasted tomatoes
- 1 can (15 oz) garbanzo beans, drained and rinsed
- 1 Tbsp Italian seasoning
- 2 tsp salt
- 1 Tbsp grated garlic
- 1 Tbsp olive oil
- 6 cups broth, vegetable or chicken
- garnish with shredded Parmesan cheese
Instructions
- Place ingredients (except Parmesan) in the crockpot and stir.
- Cover and cook on LOW for 6 to 7 hours.
- Serve hot with good crusty bread and a little Parmesan sprinkled on top.
- Will serve 4 to 6.
