Yummy! This is a great recipe that you can make for any occasion including Mother’s Day, Father’s Day, Valentines or Christmas!!! Orange Melt In Your Mouth Shortbread! These are so light and delicious! I could eat the entire batch of these shortbread cookies!
Orange Melt-in-your-mouth Shortbread

Orange Melt-in-your-mouth Shortbread

Yield: 15-20
Prep Time: 20 minutes
Cook Time: 8 minutes
Total Time: 28 minutes

This recipe is so good and doens't last long when you make it!! Enjoy ๐Ÿ™‚

Ingredients

  • 1 cup unsalted butter, softened
  • 1/2 teaspoon salt
  • 2 teaspoons almond extract
  • 1 tsp of orange extract
  • Rind from 2 large oranges
  • 1/2 cup confectioners' sugar
  • 1/4 cup cornstarch
  • 1 1/4 cups all-purpose flour

Instructions

  1. Preheat the oven to 350 degrees F (180 degrees C).
  2. Sift together the confectioners' sugar, cornstarch, and flour.
  3. Whip butter with an electric mixer until airy/fluffy (about 15 minutes). Add almond extract, orange extract, rind from 2 large oranges and salt and whip for 5 more minutes.
  4. Stir in the dry ingredients. Beat on low for one minute, then on high for 3 to 4 minutes.
  5. Pipe cookies 1 inch apart on an ungreased cookie sheet.
  6. Bake for 8 to 10 minutes in the preheated oven. Watch that the edges don't brown too much.
  7. Cool thoroughly on wire racks before consuming.
  8. Enjoy ๐Ÿ™‚
