Orange Melt In Your Mouth Shortbread
Yummy! This is a great recipe that you can make for any occasion including Mother’s Day, Father’s Day, Valentines or Christmas!!! Orange Melt In Your Mouth Shortbread! These are so light and delicious! I could eat the entire batch of these shortbread cookies!
Orange Melt-in-your-mouth Shortbread

Ingredients
- 1 cup unsalted butter, softened
- 1/2 teaspoon salt
- 2 teaspoons almond extract
- 1 tsp of orange extract
- Rind from 2 large oranges
- 1/2 cup confectioners' sugar
- 1/4 cup cornstarch
- 1 1/4 cups all-purpose flour
Instructions
- Preheat the oven to 350 degrees F (180 degrees C).
- Sift together the confectioners' sugar, cornstarch, and flour.
- Whip butter with an electric mixer until airy/fluffy (about 15 minutes). Add almond extract, orange extract, rind from 2 large oranges and salt and whip for 5 more minutes.
- Stir in the dry ingredients. Beat on low for one minute, then on high for 3 to 4 minutes.
- Pipe cookies 1 inch apart on an ungreased cookie sheet.
- Bake for 8 to 10 minutes in the preheated oven. Watch that the edges don't brown too much.
- Cool thoroughly on wire racks before consuming.
