Crockpot Chicken Chili Recipe
Have you seen this Easy Crockpot Chicken Chili Recipe? It’s sooo delicious and did I mention EASY??? This Crockpot Chicken Chili is made with hearty white beans, tender chicken, which makes it very satisfying! It would be a great dish to have during a chilly day...and it just so happens to have the added bonus of being figure friendly!
The only prep that this recipe requires is soaking the beans. It’s very easy and in my opinion healthier than buying canned beans! All you have to do is sort through the beans to find anything that needs tossed. Then put the beans in a large container, pouring 1/4 cup of organic apple cider vinegar and then water over them and go to bed. This process helps get rid of the phytic acid. Easy Crockpot Chicken Chili Recipe
Ingredients
- 2 – 2 1/2 lbs. bone-in Chicken or 1 – 1/2 lbs. Boneless Chicken Breast
- 1 onion, chopped
- 3 garlic cloves, crushed
- 1 can chopped green chilies
- 1 lb. great northern beans, soaked
- 1-2 Tbs. cumin
- 2 tsp. oregano
- 1/8 tsp. cayenne pepper
- 1 -2 tsp. chili powder
- 1 (32oz) box chicken broth
- 2 cups water
- salt and pepper to taste
- 2 Tbs. cornmeal
- 1 cup milk
Optional Garnishes: Sour Cream, Cilantro, Monterrey Jack Cheese
Directions:
- Place all ingredients in the slow cooker, EXCEPT the cornmeal and milk. {TIP: If you don’t have a crockpot, you can make this chili on the stovetop in a large pot over medium heat. Cook for about 2 hours stirring occasionally.}
- Cook on high 6-7 hours or low 8-9 hours.
- Remove chicken from soup and shred.
- Return chicken to soup.
- Stir cornmeal and milk together and add to the soup to thicken. { I also pureed 2 cups of beans in my blender for a thicker chili!}
- Adjust seasonings and serve.
PLEASE NOTE: {Note: There is no need to cook chicken before adding to the crockpot!}
