  • - 1 Frozen Pie Shell (2 per package)
  • - 1-2 tablespoons Butter
  • - 1 small mined Onion
  • - 1 (10 oz.) pkg. frozen chopped Spinach, thawed
  • - 1 (15 oz.) container of Ricotta Cheese
  • - 2 Eggs
  • - Fresh Ground Pepper and Salt to taste
  • - Grated Parmesan cheese


  1. To begin, preheat oven to 350 degrees.
  2. In a large pan, melt better and cook onion until soft.
  3. Next, add your spinach. Make sure the spinach is completely thawed out and dry. Cook until spinach is tender.
  4. Lower the heat, add eggs, ricotta, fresh ground pepper, salt, and Parmesan cheese. Mix well for a few minutes.
  5. Remove from heat and gently pour your mixture into one of the thawed out pie shells.
  6. With the other shell, gently remove it from its container and cover the pie. Press the edges with a fork and poke tiny holes on the top.
  7. Place pie on cookie sheet and bake for about 40 minutes or until golden brown.
