Italian Spinach Pie Recipe
Ingredients
- - 1 Frozen Pie Shell (2 per package)
- - 1-2 tablespoons Butter
- - 1 small mined Onion
- - 1 (10 oz.) pkg. frozen chopped Spinach, thawed
- - 1 (15 oz.) container of Ricotta Cheese
- - 2 Eggs
- - Fresh Ground Pepper and Salt to taste
- - Grated Parmesan cheese
Instructions
- To begin, preheat oven to 350 degrees.
- In a large pan, melt better and cook onion until soft.
- Next, add your spinach. Make sure the spinach is completely thawed out and dry. Cook until spinach is tender.
- Lower the heat, add eggs, ricotta, fresh ground pepper, salt, and Parmesan cheese. Mix well for a few minutes.
- Remove from heat and gently pour your mixture into one of the thawed out pie shells.
- With the other shell, gently remove it from its container and cover the pie. Press the edges with a fork and poke tiny holes on the top.
- Place pie on cookie sheet and bake for about 40 minutes or until golden brown.
