Follow our simple recipe for making Sweet Pepper Couscous Salad
You will need these ingredients to make Sweet Pepper Couscous Salad:
1 cup of cooked tri-colored couscous
1 cup of diced mixed sweet peppers (great for adding fun color to salad)
1/4 cup of Extra virgin olive oil
1/4 cup of fresh diced cilantro
Juices from 2 1/2 fresh limes
We used RiceSelect Tri-Color Couscous to make the salad, which is made with quality durum wheat, sundried tomato and spinach.
If you don’t have Tri-Color Couscous, regular couscous will work.
I added diced mixed sweet peppers, cilantro and a light olive oil and lime juice dressing just before serving and it was fantastic!
This can be made ahead of time and put in the refrigerator until you are ready to serve. It’s great for BBQ’s, potlucks and when doubled can feed large crowds quite easily!

Sweet Pepper Couscous Salad Recipe
This sweet pepper couscous salad recipe is a great side dish for any occasion.
Ingredients
- 1 cup of cooked tri-colored couscous
- 1 cup of diced mixed sweet peppers (great for adding fun color to salad)
- 1/4 cup of Extra virgin olive oil
- 1/4 cup of fresh diced cilantro
- Juices from 2 1/2 fresh limes
Instructions
- Cook Couscous according to directions. Traditionally, it's 1 cup of water to 1 cup of couscous.
- Once water is done boiling and you add your couscous to it, add in your extra virgin olive oil.
- Occasionally fluff the couscous with a fork and to stir olive oil around.
- Transfer couscous to a medium sized bowl and allow to cool for approximately 20 minutes.
- Once cool, add in fresh lime juice, diced cilantro, and fresh mixed sweet peppers.
- Mix well, and set in the fridge for approximately 30-45 minutes to give it a nice chill.
- You are now ready to serve it!
