Roasted Beet Salad with Feta Recipe
This is a delicious and easy salad that combines flavorful roast beets with feta, nuts and fresh herbs. If you don’t have fresh basil around, you can use dried basil. Also, you can try diffrent oils instead of olive oil like hemp oil, sunflower oil or others. Don’t like pine nuts? Then try different nuts like walnuts or even almonds. Goat cheese would make a great substitute for the feta. This recipe makes 4 servings.

Roasted Beet Salad with Feta Recipe
Ingredients
- 4 medium roasted beets, diced
- 2 tablespoons olive oil
- 2 tablespoon lemon juice
- 1 tablespoon chopped fresh basil
- Field greens or lettuce mix
- 1/4 cup crumbled feta
- 1/4 cup pine nuts
- Salt and pepper as needed
Instructions
How to Roast Beets:
- Preheat oven to 400 degrees.
- Individually wrap the beets in aluminum foil and roast for about 1 hour, or until tender when pricked with fork.
- Allow cooked beets to cool then dice them.
Directions to assemble Salad
- Mix the oil, lemon juice and basil in a medium bowl.
- Add the beets and toss until mixed thoroughly.
- Place some mixed greens in serving bowls. Then top with the beets.
- Sprinkle with feta, pine nuts, salt and pepper.
