Pumpkin Pie Bites Recipe
I don’t know about you, but I love the season of PUMPKIN! Ok, I realize it’s not an actual season, but Fall time means lots of Pumpkin Cupcakes, Pumpkin Cookies, Pumpkin Spice Latte’s, Pumpkin Pie, PUMPKIN ANYTHING! These Pumpkin Pie Bites are so good and are the perfect portion for 1 person to enjoy a delicious dessert! I actually like making these better than an entire pumpkin pie!

Pumpkin Pie Bites Recipe

Ingredients
- 30 oz Pumpkin Pie Mix
- 2 Eggs
- 5 oz Evaporated Milk
- 2 Refrigerated Pie Crusts
- Whipped Cream
Instructions
- Preheat oven to 425.
- Roll out pie dough and cut 3" circles out of it. You will need to roll the dough thinner than it comes out of the box and put the scraps together to a few of the circles.
- Place each circle into a mini muffin tin and form into a small pie crust.
- Mix pumpkin, eggs and evaporated milk together until well blended.
- Fill each mini pie shell with pumpkin mix.
- Bake 15 minutes, then reduce temperature to 350 and bake another 20 minutes or until toothpick inserted in middle comes out clean.
- Allow to cool completely on wire rack.
- Top with whipped cream.
