Healthy Chocolate Desserts: St. Patrick’s Day Shamrocks
Looking to live a healthier lifestyle but find it hard with all these holidays and special occasions? I personally try to limit store bought candies because they are usually filled with ingredients that are not good for my kids.
I made these Chocolate Peanut Butter Hearts for Valentines Day and decided to change up the recipe a bit and see if I could make a Healthy St. Patrick’s Day Recipe (it that’s even possible)! The true test is whether or not the kids notice the difference. And guess what?!! HA! They didn’t!  😉

Healthy Chocolate Desserts: St. Patrick's Day Shamrocks
These Peanut Butter Shamrocks are delicious and perfect for St. Patrick's Day.
Ingredients
- 12 oz bag of chocolate chips {just make sure you check the ingredients and you recognize the ingredients as real food!}
- 6 ounces natural peanut butter {it can be smooth or crunchy}
- 1/4 cup coconut oil, melted
- 1/4 cup oats {put in your blender for a few minutes}
Instructions
- Mix the peanut butter, coconut oil, and oats together in a mixer.
- Melt your chocolate chips in the microwave using a microwave safe bowl, stirring every 30-45 seconds.
- In your mold, I used a shamrock mold, put enough chocolate to cover the bottom. Then add 1-2 teaspoons of your peanut butter mixture on top of the chocolate. Now add another 1-2 teaspoons of the chocolate to cover the peanut butter.
- Lay in your freezer until it gets hard and then take out and store in airtight container in your refrigerator.
- You might have to hide these because they are delicious!
