Step 1: Peel and cut your potatoes
Step 2: Peel, cut and prepare other root vegetables of your choice! I love using onions and carrots!!
Step 3: Gather your favorite seasonings and a bit of olive oil to make a wet rub.
Step 4: Rub the wet rub you just made all over the chicken.
Step 5: Place the chicken in a roasting pan and arrange the vegetables around the chicken.
Step 6: Add 1/2 cup of water to your pan to help capture juices for a gravy or sauce.
Step 7: Cover with lid and place in 375 degree oven.
