Instant Pot Sweet and Sour Chicken Recipe

I love using my Instant Pot. It is basically a 7in1 cooker, and it slow cooks, pressure cooks, saute’s, has settings for soup, chilli, rice, porridge and even makes yoghurt!

Instant Pot Sweet and Sour Chicken Recipe
For the 1st part we are going to be using 1 pound skinless chicken breast, 2 eggs, 1/2 cup flour, 1/2 cup cornstarch and 2-4 Tbsp of light olive oil.
Cut the chicken in 1 inch cubes. Then you will dip raw chicken in cornstarch, then egg then lastly flour. Once all chicken pieces are coated set aside.
Turn instant pot on sauté. Once it tells you it’s hot add oil and then chicken.
Let brown on each side about 8-10 minutes, adjusting the chicken sporadically. Chicken should temp at 165 degrees when done.
After the chicken is done, you can make your rice. I like to use 2 cups basmati rice and 3 cups water. I simply place water and rice in the Instant Pot, seal the instant pot and push the “rice” button to start cooking.
You will also put the steam valve on the “sealing” position. Once your rice is cooked allow the steam to release naturally out of the valve for 10 minutes before lifting the lid.
While the rice is cooking you are going to make the Homemade Sweet and Sour Sauce. You will need 6 Tbsp ketchup, 4 Tbsp vinegar, 6 Tbsp brown sugar, 2 Tbsp cornstarch, 1 1/3 cup pineapple juice and 1/2 cup of a mix of diced pineapple, bell peppers and onion.
You will just add all ingredients to a cooking pot and whisk over low to medium heat until thickened.
Place chicken over rice and add sauce. Sprinkle with sesame seeds. Enjoy!

Ingredients
Lightly Breaded Chicken
- 1 pound skinless chicken breast
- 2 eggs
- 1/2 cup flour

Rice
- 2 cups basmati rice
- 3 cups water
Homemade Sweet and Sour Sauce
- 6 Tbsp ketchup
- 4 Tbsp vinegar
- 6 Tbsp brown sugar
- 2 Tbsp cornstarch
- 1 1/3 cup pineapple juice
- 1/2 cup of a mix of diced pineapple, bell peppers and onion
- sesame seeds (optional)
Instructions

- Seal Instant Pot with the lid and lock it. Push the "rice" button to cook.
- Set steam valve the "sealing" position. Once your rice is cooked allow the steam to release naturally out of the valve for 10 minutes before lifting the lid.
Homemade Sweet and Sour Sauce
- Add all ingredients to a cooking pot and whisk over low to medium heat until thickened.
- Place chicken over rice and add sauce over too.
- Sprinkle with sesame seeds.(optional)
