Crumble Cake for Cake Balls

Once the cake is cooled, crumble cake in a mixing bowl. My kids really like to help with this step. Next you are going to mix the tub of cream cheese frosting with cake crumbles until evenly dispersed.

Roll Cake into Balls

Use a medium ice cream scoop, or your hands, to roll cake mixture into 40-50 balls. After they are all formed you are going to place balls in freezer for 45 minutes to set. <—-This step is very important so your cake balls stay together and it also makes the dipping process much easier.

Unmelted Chocolate for Cake Balls

Now your going to empty the white chocolate into a bowl and microwave 30 seconds on medium heat. After done, stir and microwave another 20-30 seconds and stir with a spoon until smooth.

White Chocolate for Red Velvet Cake Balls

Please note that white chocolate can burn easily, thus the lower temperature and attention to melting time and texture are crucial.)

Cake Balls

Now comes the fun part! Remove cake balls from freezer. Hold a cake ball over the white chocolate bowl on a fork and drizzle the white chocolate over the cake ball then set it on a baking sheet or plate that is covered with wax paper.
