Easy Broccoli Salad Recipe

Everytime I make this Easy Broccoli Salad recipe, I get asked for copies of the recipe. It’s so delicious and not to mention healthy! I’m not really a fan of Broccoli, but I love raw broccoli! If you would like a slightly softer broccoli, you can blanch it for a minute. I like to let broccoli salad sit in the refrigerator for a few hours before serving. That way the ingredients can marinate together! Hope you enjoy this easy broccoli salad recipe!

Chicken Pesto Pasta Salad Recipe

Easy Broccoli Salad

Yield: 12
Prep Time: 10 minutes
Cook Time: 10 minutes
Total Time: 20 minutes

Ingredients

  • 8 slices bacon
  • 2 heads fresh broccoli, chopped
  • 1 1/2 cups sharp Cheddar cheese, shredded
  • 1/2 large red onion, sliced
  • 1/4 cup red wine vinegar
  • 1/8 cup white sugar
  • 1-2 teaspoons ground black pepper
  • 1 teaspoon salt
  • 2/3 cup mayonnaise {we like to use Dukes Mayonnaise}
  • 1 teaspoon fresh lemon juice

Instructions

  1. Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Drain, and crumble.
  2. In a large bowl, combine broccoli, cheese, bacon and onion.
  3. Prepare the dressing in a small bowl by whisking together the red wine vinegar, sugar, pepper, salt, mayonnaise and lemon juice.
  4. Combine dressing with salad.
  5. Cover, and refrigerate until ready to serve.
